How much exercise should I do during Phase I of the South Beach Diet?

Q. I am starting the South Beach Diet, and plan on exercising throughout to maximize my weight loss effort. However, I know that my body is going to feel very sluggish during the first 2 weeks as it is so adjusted to having an abundance of carbs. How critical is it to exercise during those first two weeks?

A. I worked out about 3 days a week walking the treadmill for about 30 minutes then I lifted weights just to tone my arms, I also did sit ups and played around with the leg presses after a month of this and faze1 of the South Beach I lost 20 pounds and I got to eat more food then I normally would. I had a baby a year ago so I have some pounds to shed my husband and I will be starting the diet again on Monday! Good Luck

I think you would be fine to wait until the next faze to go to the gym just make sure to stretch and do a little at home.

A. Balsamic Chicken

A terrifically simple recipe to prepare, the baked chicken is flavored with a full-bodied, sweet balsamic vinegar recipe originating in Italy. Our version of this classic balsamic chicken is actually a baked chicken recipe, and different because it uses chicken breast (which cooks faster than chicken on the bone) and is baked for a short time in a hot oven, sealing in flavors. The chicken is marinated in a fresh rosemary and garlic recipe, with aromatics and herbs commonly used with pork and lamb - but equally fantastic with chicken. This South Beach Diet⢠balsamic chicken recipe is the perfect dinner for you and your family.

Serves 2

Ingredients
2 boneless, skinless chicken breast halves
1/2 teaspoon fresh rosemary leaves, minced
2/3 clove garlic, minced
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt
2/3 tablespoons extra-virgin olive oil
1-2 tablespoons white wine (optional)
1 1/3 tablespoons balsamic vinegar


Instructions
Rinse the chicken and pat dry. Combine the rosemary, garlic, pepper, and salt in a small bowl and mix well. Place the chicken in a large bowl. Drizzle with the oil, and rub with the spice mixture. Cover and refrigerate overnight. Preheat the oven to 450°F. Spray a heavy roasting pan or iron skillet with cooking spray. Place the chicken in the pan and bake for 10 minutes. Turn the chicken over. If the drippings begin to stick to the pan, stir in 3-4 tablespoons water or white wine (if using).

Bake about 10 minutes or until a thermometer inserted in the thickest portion registers 160°F and the juices run clear. If the pan is dry, stir in another 1-2 tablespoons of water or white wine to loosen the drippings. Drizzle the vinegar over the chicken in the pan.

Transfer the chicken to plates. Stir the liquid in the pan and drizzle over the chicken.

Herb-Marinated Chicken

Ingredients
2 boneless, skinless chicken breast halves
1/2 oz. white wine
2/3 tablespoon extra-virgin olive or canola oil
1/3 tablespoon white vinegar
2/3 teaspoon dried crushed basil
1/3 teaspoon dried crushed oregano or tarragon
dash onion powder
2/3 cloves garlic, minced

Instructions
Set a heavy zip-top food-storage bag in a large mixing bowl and place the chicken in the bag. Add the wine, oil, vinegar, basil, oregano or tarragon, onion powder, and garlic. Close the bag and turn it to coat the chicken well. Marinate for 5-24 hours in the refrigerator, turning occasionally.

Drain the chicken, reserving the marinade. Place the chicken on an unheated rack in a broiler pan. Brush with the marinade. Broil 4"-5" from the heat for about 20 minutes or until lightly browned, brushing often with the marinade. Turn the chicken and broil for 5-15 minutes more, until the chicken is tender and no longer pink.

Baby Spinach Omelet

Ingredients

* 2 eggs
* 1 cup torn baby spinach leaves
* 1 1/2 tablespoons grated Parmesan cheese
* 1/4 teaspoon onion powder
* 1/8 teaspoon ground nutmeg
* salt and pepper to taste

Directions

1. In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.
2. In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.

Raspberry Smoothie

Ingredients:

* 1 cup of frozen berries (blueberries, blackberries, raspberries and/or strawberries)
* 1 scoop of whey powder
* 1 Tbs. flaxseed oil
* 1Tbs. ground flaxseed
* 2 tsp. lemon juice
* 1 tsp. unsweetened cranberry juice
* 1 pack of Stevia
* 8 ice cubes
* 1 cup water

Blend until smooth and if needed you can add a few ice cubes to thicken it up. Make a little over sixteen ounces, so it will a good size to go cup and you can take a quick shot of the extra before you head out the door.

Fresh Rosemary Chicken and Zucchini - You can used dry herbs of your choice.
