Baby Spinach Omelet
Ingredients
* 2 eggs
* 1 cup torn baby spinach leaves
* 1 1/2 tablespoons grated Parmesan cheese
* 1/4 teaspoon onion powder
* 1/8 teaspoon ground nutmeg
* salt and pepper to taste
Directions
1. In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.
2. In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.

Raspberry Smoothie
Ingredients:
* 1 cup of frozen berries (blueberries, blackberries, raspberries and/or strawberries)
* 1 scoop of whey powder
* 1 Tbs. flaxseed oil
* 1Tbs. ground flaxseed
* 2 tsp. lemon juice
* 1 tsp. unsweetened cranberry juice
* 1 pack of Stevia
* 8 ice cubes
* 1 cup water
Blend until smooth and if needed you can add a few ice cubes to thicken it up. Make a little over sixteen ounces, so it will a good size to go cup and you can take a quick shot of the extra before you head out the door.
Fresh Rosemary Chicken and Zucchini - You can used dry herbs of your choice.

What are some good snacks to bring to work during the first phase of the South Beach Diet?
Q. So far, the only one I can think of is string cheese. And maybe nuts, but you can only have a serving a day. So what's something that you can snack on throughout the day that doesn't take a lot of preparation while you are at work?

A. i jus finished phase 1 and feelin great! there are tons of snacks you can have. below i've linked a website to help you out. you are allowed two snacks a day, so remember to take em! some snacks i would have are:
-celery sticks(2 stalks) with either hummus or natural peanut butter(about 2tbs)
-bell pepper(i used a quater of green and red) sticks with hummus(about 2 tbs)
-turkey(plain) and cheese(low fat) pinwheels(2 or 3 did the trick for me)
-10 halfed grape tomatoes marinated in a little olive oil, oregano, basil, salt, and pepper (the longer it marinates the better!)
-portioned size nuts(roasted only)
-string cheese(low fat)
the site gives you a few more to work with. remember to drink lots of water. i tend to drink water before durin and after eatin. make it cool to cold water. fills you up faster. make sure you're gettin in some type of physical activity to ensure you see those results. i hope this helps, and best of luck to you~!
